In my Facebook memories today, a memory from a few years ago came up. My status was that I had made meat and potatoes for the kids, meaning hot dogs and chips.
I have come a long way from that. Just about a week or so ago, I decided I wanted to learn how to cook and bake.
Now I did cook for myself for a while between leaving home and getting married, but not well. Since then, I have done little more than heat stuff up or make pasta or barbecue.
However, since Amanda has been working the night shift and often wakes up just before dinner, I decided to take my game up a notch.
I have baked cookies and banana bread. I have made a number of dishes for supper. Surprisingly, not only do the kids eat it, they have strongly praised my cooking.
Amanda has been extremely encouraging (and patient with my newbie ways). She even bought me a dutch oven, which I absolutely love.
While this is in some ways more work for me, I enjoy it and it is good for my mental health.
I have come a long way from the time I brought a tub of margarine (and nothing else) to a work potluck.
